OLD-FASHIONED SOURDOUGH WAFFLES

Elevate your breakfast game with these sourdough waffles. Crispy on the outside, tender and fluffy on the inside, with a subtle tangy kick that’ll make your taste buds go wow. They’re like a warm hug on a plate, perfect for lazy mornings or indulgent brunches. This recipe is quick, easy, and my favorite part is using getting to use my sourdough starter discard. Pair this with your favorite fruit, maple syrup, fried eggs, or even sausage-gravy to be the winner of breakfast or brunch. Trust me, one bite and you’ll be hooked!

BUT WHY WHOLE WHEAT FLOUR?

I like using whole wheat flour to give it that wheat-y, nutty, and hearty flavor and texture. People probably say it is a good way to sneak more fiber into your breakfast, but the way I eat them it won’t matter.

NOTES BEFORE YOU COOK

  • Sourdough discard can be straight from the fridge or from your starter itself.
  • Too thick of a batter, add a splash of milk or water.
  • Too thin of batter, add a little more flour.
  • DO NOT overfill your waffle iron.
  • You can freeze these waffles in freezer bags for up to a month.

SOURDOUGH WAFFLE RECIPE

Ingredients

  • 174 grams – all purpose flour
  • 59 grams – whole wheat flour
  • 3 grams – kosher salt
  • 3 grams – baking soda
  • 460 grams – buttermilk, cold
  • 86 grams – unsalted butter, melted and cooled
  • 100 grams – sourdough starter discard
  • 2 large eggs

Steps

Preheat your waffle iron/maker.

In large bowl, whisk together the flour, sugar, salt, and baking soda.

In a medium bowl, whisk together the buttermilk, butter, sourdough starter, and eggs.

Pour the wet mixture in the bowl with the dry mixture.

Whisk only a few small lumps remain.

The batter should pour from a spoon but be runny or soupy.

Cook the batter in your hot iron waffle until done to your liking. I cooked mine for about 5-6 minutes.
