APPLES AND CHEESE, WHAT A PAIR!

First, I want to say thank you to Stormalong! Their support and their “Mass Appeal” cider made this cheese dip extra special. Reigning from Sherborn, MA (aka largest refined cider mill in the world (1880-1930)). If you are looking for some goodies to pair with the cheese, my homemade soft pretzels are a crowd pleaser and easy to make.

This isn’t just going to be one cheese, but cheddar, gouda, and cream cheese (even though some people don’t consider it cheese) It is great with green apples, sausages, pretzels, tortilla chips, and anything else really that you normally eat cheese with.

NOTES

  • You don’t have to have it plain, add jalapenos, tomatoes, onions, or anything else you can think of to add into cheese.
  • The cheese may come mealy and that depends on the fat content, too much heat (or not enough), and the amount of acid (aka curdled milk).

HARD APPLE CIDER CHEESE DIP

Ingredients

  • 150 grams – cream cheese, softened
  • 80 grams – Stormalong apple cider “Mass Appeal”, room temperature
  • 4 grams – garlic cloves, minced
  • 10 grams – Dijon mustard
  • cayenne, ground (optional)
  • 75 grams – cheddar cheese, extra-sharp, shredded
  • 75 grams gouda cheese (shredded)
  • 1 tsp worcestshire sauce
  • salt and pepper (to taste)
  • 1 jalapeno, diced (optional)
  • 1 green scallion (for garnish)

Steps

Prep the jalapeno and scallions. Set aside.

In medium saucepan, combine cream cheese and half of the cider. Cook over medium heat, stirring frequently until cream cheese is smooth and melted.

Add mustard, garlic, and cayenne to the pot. Stir until incorporated.

Slowly add the remaining cider while whisking.

In small portions, add the cheddar and gouda while whisking until cheese is mostly melted after each addition. Whisk until completely smooth.

Add Worcestershire sauce, salt and pepper to taste and whisk again.

Using a spatula, fold the jalapenos in the sauce.

Pour in a heat safe bowl and garnish with green scallions.
