You can find bananas in many households and when they start to overripe, it’s the perfect time to whip up a batch of delicious banana bread! This is a classic treat that is easy to make, a crowd pleaser, and quick relative to sourdough or white bread

Yeah, It Is a Quick Bread

Banana bread is considered to be quick because of the process. It requires not many materials/equipment and you don’t have use your stand mixer. This recipe is done in one large bowl and with a whisk and a rubber spatula. Kind of like cookies you should prep your dry ingredients first and then combine the wet ingredients and add the dry to the wet. It’s pretty quick.

Moist Walnut Banana Bread

  • Mixing Bowls
  • loaf pan
  • whisk or electric hand mixer
  • kitchen scale
  • parchment paper
  • 240 grams all purpose flour
  • 5 grams baking soda
  • 1/2 tsp kosher salt
  • 1/4 tsp nutmeg (grated fresh)
  • 1 gram cinnamon (ground)
  • pinch clove (ground)
  • 200 grams granulated sugar
  • 2 large eggs
  • 104 grams vegetable oil
  • 408 grams banana (ripe, mashed)
  • 39 grams greek yogurt
  • 5 grams vanilla extract
  • 80 grams walnuts (chopped)
  1. Set oven to 350 F / 176 C

  2. Grease and line a loaf pan with parchment paper

  3. In a medium bowl, whisk together the flour baking soda, cinnamon, nutmeg, clove, and salt set aside

  4. In a large bowl, beat the sugar and eggs with a whisk or electric hand mixer until light and fluffy, about 10 minutes

  5. While whisking, slowly pour the oil in with the sugar and egg mixture.

  6. Add the mashed bananas, yogurt, and vanilla with the sugar, egg, and oil mixture. Mix until incorporated

  7. Fold in the dry ingredients and nuts with the wet ingredients. Make sure there are no dry spots but don't over mix

  8. Pour into a lined loaf pan and bake 45-60 minutes

  9. Use a skewer or toothpick to check if the center is cooked. A little bit of batter is fine as it will carry over cook.

  10. Once ready let it cool on a wire rack, and wait for it to cool down before cutting
